I wonder if your Ernest John could possibly be Ernest Joseph??
There is a family showing on the census [ref. RG11/2941 folio 140 page 17] for 1881 which includes an Ernest Joseph of the right age, and parents Emily and John. There are two other sons Frank born c 1880 and Reginald, born c 1874.
